Pumpkin Spice Snickerdoodle Cookies

Yesterday I played around with some recipes and came up with this little treat. I wanted to make something familiar, but with a twist. I added a few new ingredients to my favorite snickerdoodle recipe (courtesy of Great Grandma Wanlass) and I am pleased with the final product. This will be a keeper at our house for this time of year!

Pumpkin Spice Snickerdoodle Cookies

1 cup butter, softened
1 1/2 cups sugar
2 eggs
1 tsp vanilla
2 3/4 cups flour
2 tsp cream of tartar
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 1/2-3 tsp pumpkin pie spice
1/4 tsp nutmeg
1 cup white chocolate chips
1/2 cup sugar
3 tsp cinnamon
1 tsp pumpkin pie spice

In a large mixing bowl, cream together butter, sugar, eggs, and vanilla. In another bowl, sift flour, cream of tartar, baking soda, baking powder, salt, 2 1/2-3 tsp of pumpkin pie spice and nutmeg. Combine dry ingredients with the butter mixture and mix well until combined. Add white chocolate chips and combine. Cover and refrigerate for at least 1 hour.

Preheat oven to 350 and grease baking sheets. Roll chilled dough into 1 inch balls. Combine 1/2 cup sugar, 3 tsp cinnamon, and 1 tsp pumpkin pie spice in a shallow bowl or pie tin. Roll balls of dough into cinnamon/sugar mixture before placing onto greased baking sheets. Bake at 350 degrees for 9-10 minutes.

Makes about 5 dozen

Chewy Oatmeal Raisin Cookies

I love me a good, soft cookie! I do not like hard cookies...never have, never will. When I saw this recipe I had to try it because I am always on the hunt for a good oatmeal raisin cookie. I have a few that are okay, but nothing to write home about. Until today! I love these cookies and they will replace all of my other oatmeal raisin cookie recipes. I think I ate like 6 today. It's been one of those days......
Oatmeal Raisin Cookies
bountiful kitchen

2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp kosher salt (yum!)
1 cup unsalted butter, softened
1 cup sugar
1 cup dark brown sugar
2 eggs, beaten
2 tsp vanilla
2 cups old fashion oats
1 cup raisins ( I used golden raisins this time and loved them!)

Preheat oven to 350*. Cream butter and sugars together. Add eggs and vanilla, and beat until fluffy. Place flour, baking soda, baking powder, and kosher salt in a bowl with wet ingredients. Mix just until incorporated. Add 3 cups oats, mix with large spoon. Fold in raisins.
Drop dough onto lightly greased cookie sheets. Bake at 350* for 10 minutes, or until golden brown.

BYU and Sugar Cookies

There was excitement in the air at our house yesterday. The beginning of BYU Football...the one time of the year when my hubby can hardly contain his excitement! He had to call me from the stadium last night to remind me how excited he was. I have to admit, I find it cute and I love going to games with him. We are raising some future Cougars in our house, so while Daddy was at the game, we whipped up some victory treats. GO COUGARS!!!

Lemon-Almond Sugar Cookies

4 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup butter, at room temperature
1/2 cup shortening, at room temperature
1 cup granulated sugar
3 eggs
3 tbsp milk
1 tsp almond extract
zest 0f 1 lemon

Almond Frosting:
2 oz cream cheese, softened
2 tbsp butter, softened
4 1/2 cups confectioners sugar
1/4 cup milk
1 tsp almond extract

For the cookies...
In a medium bowl, whisk the flour, baking powder, baking soda and salt. Set aside. Using a mixer, cream together the butter, shortening and sugar until light and fluffy. Add the eggs, one at a time until well incorporated. Add the milk, extract and lemon zest. Mix until creamy. Slowly add the flour mixture until well blended. Chill in the fridge for 30-60 minutes.l On a lightly floured surface, roll out the dough to desired thickness. Cut our into desired shapes. Place on greased cookie sheet. Bake at 350* for 8-12 minutes, depending on how soft or crunchy you like your cookies.

For the frosting...
Using a mixer, mix the cream cheese and butter until well blended and creamy. Add 2 cups of the sugar, milk and almond extract. Blend until smooth. Slowly add the remaining sugar until smooth and creamy.

Oatmeal Cranberry White Chocolate Chunk Cookies

Here's the perfect cookie for the holiday season! I would recommend eating them within a few days of making them. They weren't very moist after about a week. They are super good though!

Oatmeal Cranberry White Chocolate Chunk Cookies



2/3 cup butter or margarine, softened
2/3 cup brown sugar
2 large eggs
1 1/2 cups old fashioned oats
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1 (6oz) pkg dried cranberries (craisins)
2/3 cup white chocolate chips or chunks

Preheat oven to 375. Using a mixer, beat butter and sugar together in a medium bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate mixing bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in dried cranberries and white chocolate chunks.
Drop by rounded teaspoonfuls onto ungreased baking sheet. Bake for about 9 minutes or until golden brown. Cool on wire rack.

Makes approx 2 1/2 dozen cookies

Butterscotch Apple Cookies

Get ready for lots of apple recipes-I am almost through all of my apples! I will be posting a few apple cake recipes this weekend, so watch for them because they are good!! I am not a huge butterscotch fan, but I love the combination with the apple in this cookie. They haven't lasted too long at our house.
Butterscotch Apple Cookies
2 1/2 cups all-purpose flour
2 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1 cup packed brown sugar
1/2 cup margarine, softened
1 egg
2/3 cup apple juice
1 cup butterscotch chips
1 cup grated apples
1/2 cup chopped walnuts
Preheat oven to 350. Lightly grease cookie sheets. Mix together flour, cinnamon, soda and salt in medium bowl. Beat brown sugar and margarine in large mixing bowl until creamy. Beat in egg. Gradually beat in flour mixture and apple juice. Stir in grated apples, butterscotch chips and walnuts. Drop by lightly rounded tablespoon onto prepared cookie sheets.
Bake for 8-10 minutes, until lightly browned. Let stand 2 minutes; cool on wire racks.

The Best Chocolate Chip Cookies

For a couple of years I was on a quest for a great chocolate chip cookie. Most were good, but not memorable. Then I found this recipe and I fell in love! I have been using this recipe for about 5 years and it is the only chocolate chip cookie recipe I will ever use! The cookies are always moist and a bit gooey-the way a true chocolate chip cookie should be!
*Chocolate Chip Cookies*
1 cup margarine, softened
3/4 cup white sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
1/2-1 tsp almond extract (optional)
3 cups flour
3/4 tsp salt
3/4 tsp baking soda
1 (12oz) bag semi-sweet chocolate chips
Cream butter, sugars, eggs, vanilla and extract. In separate bowl sift together dry ingredients. Add to cream mixture and mix well. Stir in chocolate chips. Drop by heaping teaspoonfuls onto greased cookie sheets. Bake at 350* for about 8 minutes or until very lightly browned. Move to racks to cool. Makes 4-5 dozen
