Sausage and Chicken Jambalaya

Sausage and Chicken Jambalaya

1/2 cup olive oil
1/2 cup celery, chopped
1/2 onion, chopped
1 cup fresh mushrooms, sliced
1/4 tsp salt
1/4 tsp cayenne pepper
1/2 cup chopped green onions
1 lb smoked sausage, cut into pieces
1/2 lb boneless, skinless chicken breasts, cut into bite size pieces
2 cups rice, cooked with chicken broth instead of water

Heat the olive oil in a large skillet. Saute the celery, onion, mushrooms, salt and cayenne pepper for 15 minutes, stirring occasionally. Stir in garlic, green onion, chicken, and sausage. Cook for 15 minutes or until chicken is done.
Add cooked rice and mix well.

  1. We tried this one and liked it. We made a couple changes to make it lower calorie but it was great!
