I didn't have time to take picture of dinner last night, but I had to post it because it is one of my top 5 favorite dinners-pineapple black bean enchiladas! I saw a Pillsbury cook-off a couple of years ago on the food network and this was one of the recipes submitted. The pineapple caught me off guard, so I had to try them. We think they are delicious.
